Yep, it'll work just fine on a GS.  You can even use the same cable if you
want, although you won't want to.  The cable included with the Mac package
doesn't have carrier detect wired on it.  For a good cable that WILL work
100%, call InTrec or Alltech (someone else can provide the numbers I hope, I
don't have them handy)

You also shouldn't have to mess with the control panels at all unless you
have some really weird telecom software.  All the good ones (ProTerm,
Spectrum, ANSITerm, etc) will override the control panel setting anyway. 
You WILL need to make sure it has the proper slot set to Modem however (as
opposed to Printer or Your Card), but that should be it.
