Yes and no.  A good disassember will reveal the code of a program, but
inline data constructs will messup the disassembly.

Then, as for telling what language it's in, you'll have to have lots of
experience in various compilers and assemblers out there to recognize the
"style" of assembly each produces.  ORCA/C has a pretty "infamous" assembly
style :), whereas hand assembly is pretty recognizable by it's directness.
As for other compilers, I don't know and you'll have to study it yourself.
