Are we talking SCSI, so you can have both the new one & the old one
attached at the same time?  If so, good.  Just make partitions the same
size as your old ones and you can do volume copies.  Much faster than
file copying.
 
If you can't have both online at the same time, then you're stuck with
copying everything to floppies.  Major drag.  :(
