I believe you can download the latest system software from 
ftp.apple.com.  The latest is system 6.0.1.  It might be better to look 
for a local Apple users group if one is availible.  Even if they only do 
Mac they might have or put you in contact with someone that can get you 
the latest operating system.  Be warned the latest system (6.0.1) 
requires about 2Megs of memory.  You might be better off for now with 5.0.4

I can't swear to the quality but that is possible.  You could also buy a 
stereo sound card and record stereo sounds.

I've never had an Apple brand IIGS monitor so I can't answer that.
