Spectrum 2.0 changed the keys used in the ANSI online display from the
VT-100 standard (ESC [ A/B/C/D) to the ANSI standard (ESC O A/B/C/D).
These are sometimes called the "application" cursor keys.  They don't
appear to have included an option to change it back again.  This
should be configurable, in my opinion.

The delete key is easy to fix: there is an option in the Online
Display menu item (Settings menu) which specifies whether the Delete
key sends a DEL character (ASCII 127) or BS character (ASCII 8).  The
PC usually sends backspace, but Spectrum defaults to DEL (which is
correct for most Apple II BBSes).

Sorry, no idea there.  I use the VT-100 online display rather than the
ANSI one.
