If you have some way to download from the net, ProDOS 8 can be obtained by
anonymous FTP from ftp.apple.com. Look in the directory
/dts/aii/sys.soft/8bit.system.4.0.2. The /dts/aii/sys.soft directory also
contains the three most recent versions of GS/OS, the IIGS's native operating
system.
ProDOS 8 requires 64K. The version on Apple's FTP site requires at least
an enhanced Apple //e, but you don't need to worry about that, since you
have a IIGS.

Somebody else will have to answer this...I've never used a Sider.

Yes. Attached below is my list of Apple II FTP sites. Many of these sites
have IIGS software.
