Help me print!

Hi.  My old Epson FX80 died recently - and I'd like to try to upgrade
to an HP DeskJet on my original //e.  I read in the faq that it should
be able to be done - but I'm afraid I'll need a lot of help if I'm
going to figure this out.  The main software that I use is called
StockCraft - I print out graphs of stock price over time... so I'll
need graphic capability in the printer.
I've got an Apple Dumpling printer card with a Parallel interface - I
can just plug that into the printer, but what do I need for software? 
Do I need to upgrade beyond 64K RAM?
