Well, I remember how, but I went back to play the game to make sure.  You
basically just walk up to the lion 1 second or so before he stands up.
You then press the action (not switch weapon button) and you will grab
the lion in a choke hold.

It takes some practice and good timing to get this right.  After you grabbed
him, hope you got lots of health because the lion WILL thrash around and
hurting you before he goes down for the count.
