it's pretty obvious that it pipes the output from the SuperSonic to
it, but I don't get the purpose: the fan can just as easily plug
direct into the motherboard, as can the SuperSonic cable.

That's the audio input card which came with HyperStudio (along with a
microphone that plugs into the card). Its standard connection
arrangement goes straight to J25. I have one somewhere, but it isn't
installed in my IIgs any more.

The ribbon cable is supplying audio input to the Ensoniq.

The SuperSonic is a separate product. It provides amplified audio output
from the Ensoniq. I haven't looked at mine for several years, but I
expect it has a pass-through connector so that some other device can
piggy-back to supply audio input.

The FAN connection on the logic board is just a source of power. The fan
is not related to the HyperStudio audio input card - the card piggybacks
off those pins as a power source. If a fan is installed, the audio input
card replicates the FAN connector for it.

Thanks David!  So the card is a MIC in, nice!  I keep hoping I'd be
able to find the recording half of the SuperSonic card (I sold mine
nearly 20 years ago, kept the SuperSonic though).  I still have fond
memories of recording off audio CD and playing with AudioZap.  I
suppose there's no real point in trying to record off the GS, a modern
system running Audacity would be a more useful setup anyhow.

You couldn't do me a big favour and scan the Hyperstudio audio card? I spent a couple of hours looking for mine at my parents house over Christmas, but for the life of me, I couldn't find it anywhere.

As ever, I'm keen to obtain a full visual record of all IIGS relevant hardware:
