What OS should I use for an Apple //gs??

I am new to all of this...and am not sure what OS I should look use for my
//gs.  It is not clear to me the relationship of GS/OS (ie: I have install
disk for 6.0.1) and ProDos.  Are these mutually exclusive?  If I run things
from the GS/OS GUI, will all of the programs currenly on boot disks (with
ProDos) be accessible?  I don't have one yet, but I intend to get a small SCSI
HD for the GS, and it is not clear how to set this up (I basically want the
graphical user type interface since the machine will primarily be a game
machine for a 7 year old).  Any assistance will be appreciated...including any
good books that will clear up some of these questions for a newbie!

I intend to get the apple2 FAQ in a few minutes...will this give me enough
detail to answer these questions?
