Z80 card:
The Z80 card is made to run what is called CP/M. You will need to
find a CP/M master diskette in order to use the CP/M card. A good
way to get such a thing is to go to your local Apple User's Group
meeting. You can usually find where the meeting is going to take
place by visiting a university (yours in this case) and going to the
student center. Ask them about when and where. If nothing else,
they should have some information about such a group and when it
meets.
TV problem:
Usually, shades of grey mean that you are not on the channel
properly. My suggestions is to use a VHF rather than a UHF channel.
This comes simply because of previous experience. However, an Apple
computer is not really set up properly to be connected to a TV. The
composite video signal on older systems is not always in sync with a
TV's receptor (although they are supposed to be). I would check the
video sync dial (at least if I remember correctly it looks like a
miniature dial). See if it has been messed with. If the seal is
broken (it is a wax seal) then someone has gotten it off of the
standard setting. Re-adjust the dial until the picture is crisp and
clean again. Before you do this though, I would try VHF first.
