The Apple IIe card has its limitations, but as long as the program is 
unprotected (which many games were) you should be ok.  I have run Appleworks, 
ProTERM, Merlin, and many other programs that others have written as well as 
those that I have written on the IIe card.

You will find that the "fast" mode of the IIe card isn't really all that much 
faster than a IIe, and not as fast as a stock IIgs in either mode.  But, if you
are wanting to run your Apple II software on the Mac it is the best advice for 
an emulation package.
