Malay(s) refers to an ethic group of people (like south americans they
have the Incas) resident mainly in south east asia.

The religion of the Malay people is Islam (well, at least 99% I
believe).
Malaysian refers to the citizen of Malaysia (Malaysia is a country in
South East Asia), of the population is made up of a majority of
Malays.

Ding Wen's is born in Malaysia (well, I think he is !), with his
ancestors from China, and now living in Singapore.
He's ethnically Chinese, with Malaysian citizenship. Hence, he is a
Malaysian Chinese (just like chinese living in America are called
American Chinese).
