Something no-one has yet mentioned is Ninja Force's 'Picture Ripper II':

I think it's great, because it can also take screen shots of non GS/OS 
programs. The downside, however, is that you need to reboot the IIGS on 
the screen you want, boot Picture Ripper II, and then save the image.

The best way on a real IIGS is to use a FingerPrint GSi card.

Otherwise, screen shots with Bernie ][ the Rescue are great.
