I recommend using exising disk images or creating your own disk images
(in an emulator) and transferring them onto your IIgs using ADTPro via
a serial connection. This is under the assumption that your Mac has a
serial port or a USB to serial adapter. If you can transfer images via
a serial connection, you will not need a Mac 3.5" drive at all.
In the worst case scenario that you don't have a serial connection, I
would guess acquiring the USB to serial adapter would be cheaper and
easier than getting an old Mac with 3.5" drive setup. Other negatives
for the the old Mac option are:
(i) the extra deskspace consumed,
(ii) introducing another machine to setup, configure and maintain,
etc...
If your only reason for getting an old Mac is to write disks for the
IIgs, then the serial options sounds a much better way to go.
