For the problem of earlier Mac OS communicating with Mac OS X, you
might have luck upgrading the AppleShare client software through one
of the downloads at

http://download.info.apple.com/Apple_Support_Area/Apple_Software_Updates/MultiCountry/Macintosh/Networking-Communications/AppleShare_Client/

The Apple article http://docs.info.apple.com/article.html?artnum=58360
suggests for 7.5.3, you should run AppleShare client 3.7.4 which uses
Open Transport 1.1.2

I don't know if that is sufficient to access Mac OS X over TCP/IP, but
upgrading to AppleShare Client 3.8.3 and Open Transport 1.1.2 on Mac
OS 7.6.1 worked for me.
