They certainly look and sound what I need, but I would like someone's
opinion if they've ever used such desoldering tools. The continual
vacuum tool looks like good value for money if it works as advertised.

I am currently trying to unsolder RAM from a couple of IIc
motherboards - one looks like it has one bad chip, the other two
(based on the spurious characters on the screen).

My de-soldering iron combines a spring loaded one shot sucker with a
hollow tip iron and appears to be similar to the second link above.
While it has managed to get most of the solder out of the PCB holes,
there is still enough remaining to prevent me from pulling out the
chip. I really need to be able to heat all 18 pins at once.

That's the difference between a rig with serious vacuum and a one-shot. If you heat for a couple of seconds, it will completely clear the hole - both sides. Sometimes it's necessary to _add_ solder before trying this so the heat gets conducted through the via efficiently.
