I have three wires that come from each paddle, so on paddle 0, I
suppose one cable goes to pin 2 (pushbutton 0), one to 6 (x-axis Stick
1), but what happens to the third, do I have to connect this to +5V
(pin 1) or to ground (pin 8)?

Each paddle has a +5v wire, and two other wires--one coming from the
pushbutton switch and one from the 150K pot.  So the third wire goes
to +5v.

You can identify the wires by measuring resistance between pairs.
the pair with a variable resistance depending on paddle position
is +5 and PDL(x) in some order.  Then measure from the remaining
wire to each of the others and push the button.  When you find the
wire that goes to "zero" ohms when the button is pushed, and does
not depend on paddle position, you have found the +5v wire.
