Before I had a CFFA and CiderPress I did my backup by creating a ShrinkIt file archive of hard drive partitions onto a large (2GB) HFS partition and copying them over with AppleTalk.
It's gratifying to know that folks have found the Apple 2 netatalk support to be useful! Before I hacked it, it only understood the "long filename" flavor of AFP (Apple File Protocol). The original coders were obviously not A2 enthusiasts. Getting the "RandNum" authentication working (required for the //gs) was a bear. (FYI: The netatalk shipped with recent Linux distros, e.g. Ubuntu, is built with the RandNum method deliberately disabled - ping me if you are having issues and need to get it running).
A few years later, Marsha Jackson made another pass through, fixing a lot of bugs (hey, I was only doing it to scratch my own itch) and eventually getting support for network boot working.
I use a Gatorbox to bridge from a //e (with workstation card) and a //gs ROM 3 to my house network. A central fileserver speaks NFS, Samba, netatalk and AFS (I like network file services <g>). Either machine can book from the network and mount volumes. Fun and entertaining!
