There goes my hope that you were going to say "the ESR and capacitance
of IDC ribbon is sufficiently low that all but the most aggressive
card designs should work fine" ;-)

The IDE cable is pretty much the ISA bus connected to a ribbon
cable with buffers.  Well, the data bus, a few address lines, and
some decoded address lines.  That is why it is restricted to 0.5m
or so.

Since the Apple II bus runs much slower than ISA, I would expect
a somewhat longer cable to work.  Best is to have a ground wire
between signal wires.
