I have acquired a large library of 5.25 Apple ][ disks as well

someone developed an intelligent method of backing up disks to a more
modern format for the purpose of preservation?

I have the following hardware at my disposal..
An Apple ][e with 5.25 drives
An Apple ][gs with 5.25/3.5/Sider drives.
A early 2000's (era) iMac.
A non-working PowerPC (Rumor has it that fixing this may be my answer
"somehow")

Also, is there a method of moving 2IMG files back to the GS?
I've looked at ADT, but it looks a little short of the mark.

As you can see, there are lots of options for unprotected disks.

The protected disks, particularly the later ones that .nib won't
help with, are not easily captured. (In fact, at present, the
best way to capture images of protected programs is to deprotect
them first. ;-)
