This leads me to my next question though, which I think should be much
simpler.  How do I extract only those games from the disk images, and
create standalone disks?

The cracked games are executable binary files on a DOS 3.3 disk with a
small file selector added.  They are put together on the disk because
they will fit and thus take up fewer disks than if packaged separately.

If you want to make a disk that runs one game automatically, INIT a
DOS 3.3 disk and use Copy II Plus to copy the desired game file to
the disk.  Then use Copy II Plus to "CHANGE BOOT PROGRAM" to the
binary file.
