Didn't someone once make VGA cards for the GS? I seem to remember
seeing an ad for them in Joe Kohn's newsletter years ago.

Yes, the Second Sight.  It comes up here regularly, but is also known
to be a poor solution, since it was buggy and doesn't support all
graphics modes.
