Catalog command doesn't work on my apple IIe

I found an apple IIe at the thrift store with a dual disc drive. A
commercial disc will boot by inserting it in the drive then turning the
computer on (so I know the drives work), but if I put a disk in the
drive and type "Catalog" nothing happens, I think it actually says
syntax error or something. Isn't this command "catalog" a part of
Applesoft basic? I am typing it in All Caps.

Also how do I save programs I type into the computer? I know I have to
get some blank disks, but how do I format them?

Also when I turn the computer on the screen just says "Apple ][" with
no cursor. I don't get the cursor until I hit control-reset.

I have tried to find out as much info as I can by googling it, and I
realize that this is the "original" IIe, not the enhanced model based
on the start up logo. But why no cursor on this screen?

I found a bunch of disks as well, a few of them work but most don't.
Why?

I first learned how to use a computer on the Apple IIe in the computer
lab in high school. I guess it was more complicated than I remember.

Any help appreciated.
