If you are seriously into this, there's no way around "Understanding the 
Apple II" by Jim Sather. He really goes into the depths and leaves no 
questions. Besides being a must for every Apple enthusiast, this is by far 
the best book describing a computer's hardware architecture I have ever 
found. A true goldmine.
Try to get a paper copy, though. The book is beautiful.
