what was refined in the Zip Chip design?

I want to see if I can modify the SpeedDemon
scheme to use 64k RAM instead of 4k, and never
have to look at TAG RAM...  Just look at address
and determine if data needs to be sent to the MB.

I'd have to do a detailed review to give you a complete list.

The delays were changed, and derived from a counter instead
of a one-shot, for one thing.  The cache size was increased,
and the tag handling improved to handle up to 2MB (?) of
RamWorks-style AUX RAM.
