The oldest actually usable Mac (as opposed to "cool curiosity, but useless in practice") is generally thought to be the Mac Plus. Disadvantage: No ADB support, thus keyboards and mice are somewhat hard to get. Advantage: It works well even without a hard disk.
A good one to get seems to be the Classic II if you don't need color.(I got this info from http://www.lowendmac.com as I don't own a Mac myself. You might want to look over that site.)
