Put a IIe LC card into the critter, thus making it a real computer. :)
It looks like the LC III will support NetBSD, so I'll second the
"install Unix" option. It will allow you to get your Apple IIe online
with programs like lynx, mutt, tin, and many others. With programs like
nroff and TeX, you can even create publication quality documents without
leaving the comfort of your Apple II keyboard.
Of course, if you just want to use it as a gateway, go ahead. The LCIII
can do that too. Just setup pppd or SLIP on a serial port and have NetBSD
connect to the rest of the network with a static IP, DHCP, or PPPoE.
