I do a lot of transferring files between GS to MAC and back and have run
into the same problem. The difficulty for me was two fold. 

1. As another poster indicated, the filetypes get changed in the
transfer. You need to change them to their appropriate type with
utilities on each computer. On the GS, Wings, which  (I think?) was
reclassified as freeware, does a good job with the exception that the
creation date has to be reset prior to 2000.  (Shades of Y2K...<g>)

2. The MAC adds a resource fork to text file. P8 programs such as
AppleWorks don't seem to be able to open them. The easiest way to deal
with that is to use a GSOS program to open them and then save as text or
other type as appropriate.

If you don't use GSOS I think there is a stand alone program, Unforkit,
that will do the same. I've never used it so others that have may be
better help.
