For switching a relay and/or sensing digital input there were several cards. Sometimes to be found on eBay. For analog input you have two channels in the paddles/joystick input, if you need more channels or different voltage etc. you need a card.

It was also typical to buy a card with no components and build your own I/O on that.

It was easy to use the Apple II to do I/O. Nowadays it is probably much easier to use a pic or cop microcontrollers (as well as many other microcontroller). There are inexpensive kits and you can get compilers and downloading software for free...
