Cat 5 is 100 ohms, and video signals usually use 75 ohms (coax), though
if it isn't too long, and you don't mind the RFI, maybe it works.

(UTP cable is designed to work with balanced signals, to minimize RFI.
RGB video is usually unbalanced.  A ferrite bead might fix that, though.)
