That would be my first choice, after all, you have the other hardware. Find out which ones don't boot properly and keep them for the IIe. In my case it's a 2c.

Interestingly, I've noticed an odd glitch with some of my pirated
disks.  The menu loader on many of them doesn't show up for some
reason.  I can hear the background sound so I know its running, and if
I push the appropriate button the games will load, but the actual menu
is invisible (looks like a blank screen).  Very odd behavior.

I suspect this is related to how the GS handles video and memory banks. Personally, I prefer the 8 bit IIe and 2c for gaming and other 8 bit programs. I find the video output tends to view better. DHGR games however need a better monitor than the TV.

I use the GS for some development and development learning using the Orca M languages. The CD compilations of this software is incredible.

I suppose I could get a whole bunch of cracked disk images and put them
onto my HD, but it would be annoying to have to load system 6 each time
I wanted to play a game (ROM 03 is faster, but it still takes a bit to
load).  However if I did this, would 99% of the games play properly or
would I still have issues?

Another option for some games would be the DOS 3.x game loader. I don't recall the exact URL for this but it should be easy to locate. I'm sure other users here can point you in the right direction. This system lets you play many DOS games on a ProDOS based system.

I assumed using the old unidisk controller card would fix this problem.

Well one might think so but, IIRC the Unidisk controller isn't the same as the earlier disk drive controller. There were some other disk cards available that might work.
