Ringo,The Apple II certainly does colour, I would recommend you get an AppleColor Composite Monitor. This monitor does a good all round job of displaying a composite color signal, and apparently has some special circuitry that means your text-only displays show as all-white instead of rainbow. It even does a fair job of displaying 80 column text. It comes in two case styles, one looks better with a IIe and the other suits a IIc. Same guts though.

Commonest color is green, followed by amber I suppose. I'd suggest the Apple Monochrome Monitor IIe (green), as a good cosmetic match to an Apple II. This neat little unit is beige/brown and has a tiltable CRT that you can tilt up and down a few degrees with your hand.

The 9" green screen you pointed out is the same type of device, but was made by Apple to suit the Apple IIc (the compact model released in 1984), you can certainly use it but I'm a bit of a purist I'm afraid - I'd only use it with a IIc.
Pass on the Monitor III, it's an ugly (to me) device designed for an Apple III, too wide for an Apple II and with a very high persistence phosphor that messes up a scrolling image.

I'm afraid I can't comment on whether any of these work with other non-Apple computers.
