I'm saying this because I've already gone thougha all this already.
The highest system you can use with AppleShare 3.0x is 7.5.5. I tried
to use it with 7.6.x but when it comes to booting over the network it
doesn't work. Not to mention you will start to get other errors as
well. That is if you want to boot from your server (not it is slow to
boot over the network).
If you just want to copy files from your IIgs to the Mac, all you
need any System from 7.0x and up to 9.x and turn on file sharing via
control panel. Mac OS X doesn't do AppleTalk correctly (Just my
thoughts) so you can't use Mac OS X for this.
