I'm using Photoshop 7 but I'm only using it for two functions. I found
that in many cases OCR software does better from an already scanned page
than it does inputing directly from the scanner. Even more so in some
cases if I do a bit of correction to the image. You've probably seen
papers that a scan or photocopy yields a distinctly dark gray result.
So I take a look at the results of a scan before OCRing it and if say
the  paper comes out grayish I'll use "Curves" to adjust it to black
text on a white background.

The other place Photoshop comes into it is because my OCR software
doesn't do well with images I use Photoshop to to deal with the images
that I past into the text document.

I don't combine the individual scans. I work with each page separately
and turn them into a single page PDF. Then I use Acrobat to combine the
pages.
