netatalk works fairly well for this:

Any NIC supported by the OS you're running should work.  (The machine I have
that's currently running netatalk uses a 3Com 3C905B.)

AFAIK, the few Ethernet cards that exist for the Apple II don't support
EtherTalk.  You'll need to use LocalTalk on Apple II clients (built-in on
the IIGS, available as an add-in card for the IIe) and a LocalTalk-to-
Ethernet bridge of some sort (like a Cayman GatorBox) to enable Apple IIs to
access netatalk servers.
