Back when I did this, I used:

Apple IIgs <--Mac Modem cable--> [NULL MODEM] <--PC Modem cable--> PC

I was able to do 57600 using Proterm once I got it transferred to a 3.5" 
floppy. I ended up running a getty on my Linux box and using Proterm to 
log into my linux system.. then I could sz and rz files back and forth. 
It worked SWEET! Was able to get all my old 5.25" floppies and stuff 
transferred to the PC for permanent preservation...

Since I already had a mac modem cable and a PC modem cable laying 
around, all I needed was the null modem adapter. It has to have two 
female 25 pin connectors, of course.
