You might be able to just use a TV set. On the back of many TV sets today there are auxiliary or "component" inputs. They typically give you a video and left and right audio inputs. The video is plain old NTSC (baseband --- not modulated). You should be able to hook the composite output of your Apple directly to this video input. Then push the "video" button on the remote to select that input.

My big sony has these types of inputs, but also has "component" inputs labeled Y, Pb and Pr. The Y is the luminous (black and white) signal, and the Pb and Pr give color information (the in-phase and quadrature phase components of the color burst signal). You don't want to use these. If you plug into Y you will get a black and white picture only. But if you see these three (you most likely have a more expensive set), then you will most like have a set of connectors with a single video input. Even cheap TV sets today have these connects. You could probably buy 13" or 19" for under $200.

Many TVs today have higher resolutions than what was available when your Apple ][ was in its hey day. My Wega has a couple of high definition modes. I would bet that it would work with an 80-column card or other graphics card that you might have (provided that the output is still composite NTSC)

Might be fun to hook your old Apple up to a 32" screen and load up some of those old arcade games.
