Have you tried using Drive Setup (from Mac OS 8) to mount the drives? 
I'm having trouble getting my ProDOS partitions to auto-mount, but Drive 
Setup can mount them (SCSIProbe 3.5 and 4.3 don't work). Just click on 
the appropriate line in the list of devices and then choose Mount 
Volumes from the Utilities menu (or Apple-M).

PS You may have more luck with SCSIProbe, as it was originally 
distributed to mount SyQuest devices - not sure if it will handle the 
ProDOS part, though.
