I've used a Personal LaserWriter IINT that I got from a school sale. 
Worked great for several years until the fuser gave out.  I believe
any LaserWriter with the built-in AppleTalk interface is almost
guaranteed to work.  I've also been able to use other PostScript
printer with an EtherNet interface via a GatorBox AppleTalk<->EtherNet
bridge.

The main requirement is to find a printer that accepts PostScript
directly.
