Therefore according to the book, Apple had used the 6800 from the beginning.

Apparently the book is in error- but why would Apple deliberately alter
their own history?

Woz did do his first *design* for the 6800, but he couldn't afford the chip. When he was able to get several 6502s for 1/10 the price, he altered the design. Aside from the cost, the fact that the 6502 is very similiar to the 6800 attracted him.
