Scott, I think the problem is that the File Sharing in Mac OS X doesn't
want to use AppleTalk, but wants to use TCP/IP - it will use AppleTalk
to report itself to the network, but not for the actual connection. The
program to enable AppleTalk file sharing is SharePoints - available at:
http://www.versiontracker.com/dyn/moreinfo/macosx/12512
It has an option under AFS Properties to enable AppleTalk. That should
get it working (fingers crossed).
