I was thinking the same thing.  $3000 is an awful lot of money to spend,
with only the hope of making some money back.  More likely, someone buying
that many computers is going to be stuck with a lot of them.

There is nothing appealing about a Mac Plus, other than for collecting.
I used one for four years, because it was free, but since there are later
generations of Macs available, the appeal is gone.  If nothing else the Mac
Classic which is basically the same computer, has the built in hard drive.
They are nice compact computers, but if I needed compact, I'd pick the Classic
or something else to keep around as a terminal.

How many people who want an Apple II don't have one at this point?  They'd
be better off waiting until something local comes around.  The middle man
of this scheme means that someone has to stockpile the computers while 
the few stragglers come out of the woodwork.

If they were IIGS's, it might be a different matter, though even then
it's a risk.  And I can't really see school computers offering much
in the way of hard to get boards or accessories, which as you say
would create interest.
