I've encountered this problem before.  It was caused by the Apple crystal
oscillator(/4) being just enough off the standard color burst frequency
that a TV set didn't see it as a color signal.  In a perfect world, the burst
frequency is 3.5879545MHz, with a little wiggle room, but some older
Apples have drifted enough that they won't work with a modern TV.

You might want to try it with another TV or a composite monitor just
to see if another set is more forgiving.

If none of them produce color, it may still be the oscillator, or it may
be that the //e has failed in an interesting way that kills the color burst
in its video signal.
