I have that same G3. I've had it AppleTalked to my IIgs via the serial 
ports. If you have Localtalk Bridge on the Mac The IIgs can see the hard 
drives of computers connected to the Mac via ethernet, if they're setup 
for it. I don't have ethernet on the IIgs so unfortunately I've never 
tried that
   
With a CD burner I've used Toast to burn CDs in various formats 
including ProDOS. Having the 6.0.1 installation disks on CD has 
proved handy. Also a great way to make a bootable backup of an 
Apple II hard drive.

Your G3 has two ide busses and one SCSI buss. The original HD & CD 
are ide. You should also have a couple of empty drive bays so you can 
easily add a couple of internal hard drives be they SCSI or ide.

Which OS is best? Amongst other things the floppy drive doesn't 
function under OSX so you're better off under an earlier OS. You'd 
also need a minimum of 128 mb of RAM for OSX. While it will work, you're 
really tight for RAM under OS9. Given the low price of RAM right 
now I'd suggest you pick up some and go with OS9. While that G3 
originally came with PC66 RAM you can also use PC100 or PC133 RAM in 
it. Also as memory increases OS9 loads more of the System into RAM 
for faster response so with more RAM the computer feels faster.
