Of course it's possible--it's just not a profitable investment.

The ardent desires of a hundred people do not translate into a
viable business plan--except, perhaps, for someone who would
do it for love, not money (which isn't really a business plan, either).

It is not impossible to move data from the Apple II world to today's
computing world.  It is just not as convenient as plugging a disk
drive into a USB port.  ;-)
