Of course I didn't mean that the types are converted, only that
the OS doesn't enforce any particular understanding of what kind
of data can be seen by what kind of app.  The app may not be
able to make sense of it, but I can use WordPad to open _anything_
and can usually figure out what it is and what to do with it.

I like the idea that filetype associations are just "suggestions" that
I can easily override without fiddling with the file itself.  I also like
that I can open a given filetype, say .jpg, with any of a dozen apps
that can understand it--not just it's "creator" app.

Put another way, I find the Mac too "helpful" for my taste.  I prefer
having more direct control over the interpretation of my files.
