In system 7.5 or greater, format the floppies using the Prodos
format.  Put in a blank disk into  your Mac and it should ask
for initialize the disk.  Click on initialize.  It should ask you
what format you want.  I have the options MS-DOS, Mac
or ProDOS on my Mac.  You should be able to select whether
you want 800K or 1.44meg format.  Select 800K.  It should
then format the floppy.

Now you will need to download the DiskCopy program from
the Apple site. Install the application.  Run the Disk Copy program.
Drag & drop the GS/OS disk image onto the Disk Copy
dialog box and it will open the disk image as a disk.  Now
copy the programs from the disk image to the actual ProDOS
volume.  Repeat for all seven of the GS/OS disk.  You really
only need Install, Tools 1 and Tool 2.  The System disk is
nice to have too since it will boot GS/OS.
