1) I do not know what the switch is for unless it is the keyboard
encoder switch that changes the Dollar Sign symbol to that other
currency. (Shift 4, I think.)
2) Your best bet is to ask for a set of books, I'm sure someone here has
a set they'd be happy to let you borow or have. (Youmay want to post
your geographical location to encourage a local to assist.)
3) Reset on the IIe only works in conjunction with the control key. You
are correct that it does nothing by itself. Apple learned with the II+
that the reset key is too easily pushed accidentally when it works by
itself.
4a)You answered that for yourself, you hook you pentium to the IIe via
serial cable. This is the easiest method for my money.
4b)Find a Super Serial card and use a PC modem cable (and gender changer
as necessary) to hook Pentium and Apple II together. Be sure to put the
SS card in printer mode. No pin outs should be necessary.

Modem" cable? A typical NULL modem is two Dsub 25-pin female sockets
(call them "A" and "B") wired back-to-back as follows ...
Socket-A Socket-B If Socket B is 9 pin.
2 -> 3 2
3 -> 2 3
4 -> 5 8
5 -> 4 7
6 & 8 -> 20 4
7 -> 7 5
20 -> 6 & 8 6 & 1
Note: 6 & 8 are connected at each socket. (That is, if you are making a
cable instead of using back-to-back sockets, you do not want to run 6
and 8 separately to pin 20 on the other socket. For back-to-back
sockets, it's okay to run separate short leads if you like.)
