I have a Video 7 adapter and unfortunately there was nothing released that
would use it except for the demo disk that came the adapter. All other
IIc programs were optimized for composite video and it doesn't look any
different. Even 80 column text on a composite monitor looked the same as
the RGB output (actually the composite text was clearer as my RGB monitor
had multiple pixels and caused a slight blurring of the text).
All other software (games etc) were programmed in the basic colors that
were obtainable by composite video. RGB made them look no different.
